Ugadi Pachadi is a special dish prepared for the Telugu and Kannada New Year, symbolizing the six tastes of life—sweet, sour, salty, bitter, spicy, and tangy—representing different emotions and experiences.
Ingredients
- 50 g jaggery, grated (sweetness – joy)
- 100 ml water (to dissolve the jaggery)
- 50 g raw mango, finely chopped (sourness – surprises)
- 1 tsp tamarind paste (tanginess – challenges)
- 1 tsp neem flowers or tender neem leaves (bitterness – sadness)
- 1/2 tsp black pepper powder (spiciness – anger)
- 1/2 tsp salt (saltiness – fear/acceptance)
Instructions
1. Prepare Jaggery Water
- In a small bowl, add grated jaggery and 100 ml water.
- Stir well until the jaggery completely dissolves. Let it sit for a few minutes.
2. Assemble the Pachadi
- In a mixing bowl, combine finely chopped raw mango, tamarind paste, neem flowers, black pepper powder, and salt.
- Pour the dissolved jaggery water into the mixture and stir well.
3. Adjust the Taste
- Taste the pachadi and adjust the sweetness, sourness, or spice level as per your preference.
- If needed, add a little more water for a thinner consistency.
4. Serve
- Serve fresh as part of the Ugadi festival meal.
Storage
- Best consumed fresh on the same day.
- Can be refrigerated for up to 1 day, but the neem flavor may become more intense over time.
